Gathering & Flora
There are different types of fauna around the map some will be for your dinosaurs diet and others won't. There is nothing wrong with eating plants that are not part of your diet. The best time to consume non-primary food is if your primary diets are already to 100%+ and you just need a quick snack.
Some plants require you to dig up roots, jump up and grab them from branches, bash them open with your head, and others you can simply eat without a required action. Some dinosaurs are unable to dig up roots so they are able to eat the flower on top. As far as I know no one else can open a coconut.

GATHERING TECHNIQUES
Knocking Down Coconuts
Line your head up and face the tree. Charge towards it and then Right Click looking slightly downward towards the base of the tree but not to the roots. Head Butt the tree repeatedly to knock down coconuts. A satisfying thud noise noise and then dropping coconuts will prove successful.
Breaking Open Coconuts
Look directly down at a green coconut and then right-click (Head Butt). If successful the coconut will become brown. Hitting it one more time will give you an edible piece to eat.
Diggin Rooted Plants
Walk up to any rooted plant such as Sunchoke Roots and it should pop up with the E key to Dig. Press E and the animation will start. Sometimes once dug up the flora will be harder to see.
Grabbing Fruit from Bushes/Trees
Line yourself up below any fruit tree or bush. Using the jump key you will jump over the fruit you had lined up with and as you are in the air use G (Grab) to snatch one from the bush.
Larger dinosaurs can just walk up and start eating directly from the bush or tree.
